The Wine
Our Defiance Pinot Noir is a limited release, single vineyard wine made from grapes grown on our Defiance vineyard on Felton Road. It is produced in limited vintages each vintage.
The grapes for our 2019 Defiance were hand harvested on 2nd, 3rd and 7th April 2019. The fruit was predominantly de-stemmed with 16% whole bunch pressed into stainless steel tanks and fermented with indigenous yeasts. The wine was aged in French oak barriques (28.5% new) for approximately 14 months.
The 2019 vintage is ruby in colour with garnet hues. The wine has fragrant notes of boysenberry, blackberry and dark plum on the nose, complemented by leather, liquorice, dark chocolate and a hint of truffle. The palate is silky with a lush entry of red stone fruit, dark plum, figs, coffee and chocolate. Concentrated, rich and complex with fine grained tannins and a long black fruit finish.
Food match: rabbit, duck, lamb, or sip and contemplate by itself.
